Cuts of venison up for grabs at Dorset auction
Bidders will certainly need a taste for the items going under the hammer at one of Dorset's most unusual auctions.
A venison auction is to be held in aid of charity at Abbotsbury Subtropical Gardens. It will feature a fallow deer carcass from Ilchester Estates, which owns the gardens and thousands of acres of Dorset countryside.
Ray Smith, the original River Cottage butcher, and Richard Squires, deer manager of Ilchester Estates, will run the event in aid of the Weldmar Hospicecare Trust.
It will take place in the Colonial Restaurant at the gardens on Friday, February 8. The restaurant serves venison from the estate.

Mr Smith, a master butcher and former head of butchery at the School of Artisan Food, will demonstrate traditional butchery methods on a skinned 50lb fallow deer carcass hung from the rafters.
John Houston, general manager of Abbotsbury Tourism, said: “Ray and Richard will explain the different cuts of meat with an on-going tutorial. This will be extremely interesting for cooks wishing to learn more about butchery first hand from these local experts. Abbotsbury Subtropical Gardens thanks them for kindly offering up their time and service for free for the Weldmar Hospicecare Trust, a very deserving charity.”
